At the start of the Guatemalan civil war, San Juan Chivite was actually part of a coffee farm, but when coffee prices eventually declined, the owner sold his land, which ended up in the hands of 64 indigenous Maya families previously displaced by the war.
These families initially grew both coffee and cacao, but in 2002, they let the coffee go, switching entirely to our cacao, a decision for which we would should all be thankful.
Until recently, they only sold their cacao locally, at low prices, but thanks to a partnership with Cacao Verapaz, the village improved their fermentation and drying techniques, opening up a wider, international market for this outstanding cacao.

Single Origin Asochivite Hot Cocoa
We make our delicious hot cocoa from the same premium single origin beans we use to make our chocolate, so each variety has it’s own unique flavor profile! This Asochivite hot cocoa has a light taste reminiscent of the cacao fruit from which it’s made.
We’re one of only a few chocolate makers who press their own cocoa butter. One of the many benefits of this time consuming process is that we’re able to make this rich, incredibly flavorful hot cocoa mix from scratch right here in our kitchen.
Most hot cocoa is alkalized, which means it’s washed with a solution of potassium carbonate. This allows the cocoa powder to dissolve in milk or water more easily, but significantly alters the flavor. Alkalizing also removes a significant amount of the natural flavanols, which are compounds that play a significant role in the beneficial effects of eating cacao.
Our cocoa is NOT alkalized. You may need to stir a your hot cocoa a bit more vigorously but you’ll taste the unique flavor of the beans, and get the full benefit of cacao’s flavanols!
