About the Artisans

Cacao Prieto

Cacao Prieto is a Brooklyn-based company producing farm-to-bar chocolate daily from the finest organic, single-origin Dominican Republic Chocolate. It’s also a crucial meeting places of ideas, dreams, technology and tradition… a place where, by creating chocolate the right way, there is an idealistic sense of purpose that this might make the world a better place.

Founded by inventor and aerospace engineer Daniel Prieto Preston, whose family has been farming cacao in the Dominican Republic for more than 100 years, Cacao Prieto sources organic cacao from Coralina Farm(the family’s farm) and organic sugars from the Dominican Republic. Cacao Prieto is now one of the few chocolate companies in the world completely vertically integrated from farm to finished product!

Palette de Bine

Palette de Bine believes in an honest approach to making chocolate. They make their single-origin chocolates in small batches, with a focus on simplicity and quality.  Their beans are selected, roasted, cracked, winnowed, refined, conched, aged, tempered, molded and wrapped by hand at their production facility in Mont Tremblant, Canada. Christine Blais is the mastermind behind the chocolate creation, and with her expertise, Palette de Bine has quickly become an award-winning chocolate maker.

Rococo Chocolates

Chantal Coady founded Rococo Chocolates in London, England, in 1983. Through their motto ‘Pleasure and Provenance’, Chantal and the rest of the company has been changing the way people view chocolate ever since. Rococo focuses on the provenance of their ingredients, using organic whenever possible. They own a cocoa farm in Grenada and work very closely with the Grenada Chocolate Company to make fantastic chocolate. Chantal Coady was recognized in 2014 for her achievements in the chocolate industry by the Queen of England, receiving an OBE (Order of the British Empire) in the Queen’s Birthday Honors.

Undone Chocolate

Undone Chocolate is made with beans full of integrity. They source cacao from small producers and then analyze the beans to find ones with the highest levels of antioxidants. These are used to make their delicious chocolate bars, and the shells from these beans are then used to make their cacao tea.

Adam Kavalier got into chocolate making as a scientist, he has a PhD in plant biochemistry. Along with his wife, Kristen, he started Undone Chocolate to bring healthier chocolate to the world. After just one year in production, their bars are making a name for themselves in the craft chocolate market. The cacao tea is like nothing you’ve seen before, a chocolate flavored tea, much lighter than a hot chocolate and certainly better for your health as well!
